There are sweet watermelon salads — think the classic July 4 combo of watermelon, banana slices and blueberries. And, there is this salad, which is simply the best I’ve ever tasted.

Oops! Forgot the strawberries in this photo, but it was still tasty! 🙂

An editor friend served it during a work session. It was so good, it was hard to pay attention to schedules and deadlines and whatnot. Which is probably the point.

So, if a picnic is in your near future, you might want to give this one a try.

Melon-berry-‘mater-mint Salad

Cube one seedless, red watermelon, removing all the rind. Place cubes in a large mixing bowl and set aside.

Wash and halve one pint of red cherry or grape tomatoes. Add to the bowl. Wash, hull and slice 1 pound of strawberries. Add to the bowl.

Add 1-2 teaspoons of balsamic vinegar, the juice of one lemon, 1 Tablespoon of olive oil and several grindings of black pepper to the bowl. Gently stir to coat and mix. Top with a handful of fresh, de-stemmed mint leaves.
